Treat yourself like a Queen this weekend with these easy breakfast recipes!
Saturday mornings and early afternoons are for me.
That’s been my rule for several years now, and with only some exceptions (going out with the girls to brunch, going to a morning event or protest, etc.), I’ve held to this rule.
I started this habit of making Saturday mornings/afternoons for me while I was working a very stressful job with a very hectic travel schedule that left me little time for self-care. (I was literally never in the same place for more than 48 hours at a time, including my own home.) Between work, marriage, and trying to keep some semblance of a social life in order, I had run out of time for me. It was making me exhausted, irritable, and unhealthy mentally and physically.
So I carved out some time in my schedule on Saturdays (usually from the time I wake up until 3PM) and made me-time a priority. I allow myself to sleep in and wake up slowly, and spend the time engaging in activities that bring me joy: reading, writing, working on art, sitting out on my balcony, listening to music, binging on Netflix or the extensive film library my husband and I have.
One activity that is a Saturday morning staple is treating myself to a scrumptious breakfast.

I’ll confess, on normal workdays, I’m not the greatest about breakfast. My body can be really weird about eating when I first get up, so usually work day breakfasts are small and quick: tea, coffee, or juice, and a small something to eat like grapes or a banana, or a bagel or muffin, maybe oatmeal.
But Saturday morning breakfasts are a different story. I slow down, take my time, and prepare something tasty for myself with love. It began with just fancying up some scrambled eggs with cheese (mmm…shredded Mexican 4 Cheese Blend) and cooking up some bacon. Then I started making omelets, tossing in broccoli, onions, ham, and seasonings in with the cheese. I continued making eggs different ways, and then throwing in pancakes and French toast into the mix, and having fun with different oatmeal variations.
On some Saturday mornings I’m more adventurous than others, sometimes I just want something simple, which is why playing around with different recipes over the years has been fun.
I highly encourage you, once a week, to take some time for yourself and cook yourself a special breakfast. Show yourself some love! So let’s talk today about some fun and easy breakfast recipes.
I love this twist on a breakfast classic. Sometimes croissants, bagels, and subs are just too much bread, but the tortilla provides just enough with a satisfying crunch. The recipe calls for bacon bits, but I usually like to cook up bacon strips and crumble them myself. Don’t be afraid to get creative and toss a few more ingredients (I found that adding in some chives adds a delicious dimension to the taste.)

Mmm… warm fluffy pancakes with syrup drizzled and dripping down. Pure breakfast heaven! Sure, it’s easy to buy pancake mix (I’ll admit I can be a bit of a Bisquick girl), but if you’ve never had pancakes made from scratch, you are missing out! This recipe delivers a good basic fluffy buttermilk pancake but also serves as an excellent base recipe for more creative pancakes. Blueberry pancakes, peanut butter pancakes, walnut pancakes, banana pancakes, the possibilities are endless. (But that syrup better be 100% Maple if it’s going to be on my table!)

3. Blueberry Banana Baked Oatmeal in a Mug
What a delicious and easy variation on oatmeal! Blueberries, bananas, cinnamon, and flax seeds round out this wholesome recipe. It’s pretty quick and only requires the ingredients, a mug, and a microwave. A definite go-to staple when you want something tasty, healthy, and simple. Plus, since you make it in the mug, the clean-up is so easy!

I’m not gonna lie, French toast is probably my favorite kind of breakfast food, so this recipe was right up my alley. A simple variation on your basic French toast gives it a fun finger food presentation. An easy vanilla custard built into the recipe gives it the signature eggy coating that makes any drive thru or microwave French toast stick seem amateur at best.

Mmm…melty, crispy cheese and an over-easy egg! My mouth waters whenever I make these. It’s a super easy way to have egg and toast all-in-one style. Just make and bake for 10 minutes (although you can play around with the timing depending on how runny you like your eggs).

Smoothies are a great breakfast option, especially on days where you’re just not feeling solid food quite that early in the day yet. Blend in some blueberries, blackberries, and a banana into Greek yogurt and your liquid of choice (the recipe calls for soy milk, but you can substitute your favorite milk option). Best of all, this high protein (gluten free) breakfast takes only about 5 minutes to make!

A fruit cup never tasted so good! Strawberries, blueberries, blackberries, and mango make the base of this dish. Peppered with quinoa and topped with a honey lime dressing… Yum! An absolutely delish and very gluten-free way to start your day!

These mouth-watering breakfast casserole muffins blend egg, cheese, and ham into a delicious breakfast treat! The best part is they are freezer friendly so you’ll have plenty for the rest of the week.

A different kind of breakfast sandwich! This recipe packs in some of my favorite breakfast flavors: cinnamon, banana, and French toast! And it only takes about 10 minutes to make. Double win!

This scrumptious breakfast melt satisfies my love for avocados and finishes off with a little kick of cayenne! How’s that for your wake-up alarm?! This melt is super quick to make and is surprisingly filling.

Another great smoothie breakfast option! With my love of peanut butter and bananas I just can’t resist this! Blended in with Greek yogurt and honey this is an easy yum for sure.

No better way for a super easy and healthy gluten-free breakfast! The recipe calls for strawberries and blueberries, but you can change it up to whatever berries are currently in season. The mason jar is a nice, fun touch!

I’ll admit I’m not the biggest waffle person (which is weird because I like pancakes, so you wouldn’t think there’d be much of a difference but, alas, my taste buds are quirky just like the rest of me), but I LOVE PB+J so this recipe hits the spot! Add some berries or bananas in for new taste dimensions!

Pudding for breakfast? YEP! This healthy morning pudding will make you feel like a queen with some dessert for breakfast. Plus, it refrigerates well for future servings. It’s the perfect options for when you’re not feeling solid foods early in the day yet, but also want something different than a smoothie.

Could resist finishing the list off with this decidedly dessert-for-breakfast recipe! The marriage of the pancake and the cinnamon roll is a union to be celebrated, indeed! This recipe calls for box pancake mix like Bisquick, but you can also use the buttermilk pancake recipe at # 2 on this list if you like baking completely from scratch. Either way, this is guaranteed to be decadently delicious!
